NEW WAVE RAMEN CELEBRATES THIRD BIRTHDAY WITH TOKYO’S RAMEN BREAK BEATS

By Anna Gledson

Michelin-recognised chef Takuro Yanase comes to Manchester for Ramen Break Beats’ first-ever European event

New Wave Ramen will celebrate its third birthday on Saturday 3rd and Sunday 4th October 2026 with an exclusive collaboration featuring Takuro Yanase, founder and chef of Tokyo’s acclaimed Ramen Break Beats.

The weekend will mark the first time Ramen Break Beats has hosted an event in Europe, making this a rare opportunity to experience one of Tokyo’s most celebrated ramen shops outside Japan.

Founded by former DJ Yanase in Meguro, Tokyo, Ramen Break Beats has earned a Michelin Bib Gourmand and has repeatedly been selected for Tabelog’s Tokyo Ramen Top 100. Known for combining meticulous Japanese craftsmanship with a musical sensibility, it has become one of the most sought-after ramen shops in the city.

For this exclusive Manchester appearance, Yanase will work alongside chef Phil Cook and the New Wave Ramen team to create a completely original bowl of ramen, available only during the two-day event at New Wave’s Tib Lane restaurant.

The collaboration will bring together the ideas, ingredients and techniques of both kitchens, marking New Wave Ramen’s third anniversary with one of its most ambitious events to date.

Music will remain at the heart of the weekend. Talking Drums will make their New Wave debut on Saturday, soundtracking the restaurant with an eclectic selection of records and edits spanning the weird, wonky and wonderful. New Wave favourite Richie Bee will take over the controls on Sunday.

Bookings are open now.

A £25 deposit will be required to secure each reservation and will include the exclusive collaborative ramen bowl, along with a slice of New Wave’s third-birthday cake.

A vegan option will also be available. Due to the nature of this special collaborative menu, the restaurant may not be able to accommodate every dietary requirement. Guests should contact New Wave Ramen before booking if they have allergies or specific dietary needs.
